Cherry Ratafia

Stone some ripe sound cherries, put them into a jar and cook in a pan of boiling water till the juice flows freely, the strain and measure the liquid, put it into a jar with 1 quart brandy, 1/4 oz. nutmeg, 6 cloves, 4 oz. blanched and pounded cherry kernels, and 12 oz. pure cane sugar to every pint of juice.

Cover closely and infuse for 1 month, shaking the jar twice daily, then filter into bottles, and cork and seal them securely.
