Cherry Compote.

Ingredients: (Serves 6)

  • 1 cup red wine
  • 1 cup water
  • several strips lemon and orange rind
  • piece of cinnamon stick about 5 cm long
  • 500 g cherries
  • 1 punnet strawberries
  • 1 punnet raspberries or other red fruit


Put the wine and water into a saucepan with the strips of lemon and orange. Add the cinnamon and bring to boil. Tip in the cherries and leave over a very low heat for about an hour or until the cherries are softened. Don't let it boil, or the cherries will wrinkle and the compote will not look nearly so attractive.

Transfer the cherries to a bowl and boil he liquid down to a cup and a quarter, then pour back over the fruit through a strainer, thus removing the citrus rind and cinnamon stick. When cool, refrigerate covered and stir through the hulled berries close to dinner time.
